Description
Loving Earth's certified organic Cacao Liquor comes from Satipo in Peru. Cacao Liquor is made when Cacao beans/nibs are slow ground into what looks like chocolate paste. Once the paste becomes smooth, it is poured into trays and left to solidify into the Liquor.
Loving Earth's Cacao Liquor is the foundation of both our Cacao Powder and Cacao butter. It is the cold pressing of the liquid Liquor that separates the butter from powder. The slow grinding of the nibs naturally produces heat through friction, and the liquor can get as warm as 40 degrees. No other heat is applied to the raw materials through the liquor processing.
Historical Usage
Cacao liquor has been used by the chocolate industry for hundreds of years as the core ingredient of all Cacao based confectionary. Cacao liquor is sometimes referred to as Cocoa Mass. It is the main ingredient in most conventional chocolate bars. The liquor traditionally has milk by-products, sugar and lecithin added which is the basic formulation of all conventional chocolate bars. This is how "chocolate" is usually found in the local supermarket. Loving Earth's Cacao liquor is raw, and minimally processed.
Serving suggestions
Cacao liquor can be melted down and used in your own chocolate recipes. Adding additional Cacao Butter will result in a creamier tasting chocolate base. If you combine the liquor with Agave syrup or honey and allow it to set into your fridge you have the beginnings of an amazing raw chocolate bar!
The liquor can also be used to make Chocolate smoothies. As the liquor is hard and solid we advise that you use a powerful blender to ensure that your ingredients are blended smooth..
